Quinoa with a Kick

This recipe combines quinoa (a grain-like food that contains a good amount of protein), veggies, and just enough cayenne pepper to make every bite worthwhile. Served good as a side-dish or packed in a lunch box with spinach or greens. 

What You'll Need
1/4 Cup Traditional Quinoa
1/4 Cup Red Quinoa
3/4 Cup Shredded Rainbow Carrot Sticks
1 Cup Chopped Celery
1/4 Cup Chopped White Onion
2 Tablespoons Chopped Fresh Basil
1 Tablespoon Olive Oil
1- 1 1/2 Teaspoon Cayenne pepper (Or more if you like!)
Salt & Pepper

STEP 1: Place traditional and red quinoa in a soup pan. Add 1 1/2 cups of water. Bring to a boil and reduce heat to simmer until cooked.
STEP 2.  Wash and shred rainbow carrots. Chop basil, onion and celery.
STEP 3: Place quinoa, carrots, basil, onion and celery in bowl. Mix in olive oil and cayenne pepper. Add desired amount of salt and pepper.

Double recipe if you're cooking for a family and possibly want some leftovers for lunches.
